This is a wonderfully autumnal dish that mixes the best fruits of the season with tender, earthy venison - a great way of teaming three seasonal ingredients. It seems to be nature’s trick to make things that are in season together, taste great together. It takes a bit of organisation to serve, because the sauce can only be made at the last minute, so I find it’s best for just two as a treat.
