The French don’t have such strict serving rules when it comes to red and white wine as we do in the UK. They don’t think twice about serving red wine with fish, or indeed, white wine with meat. It really depends on how deeply flavoured the fish or meat is. For example, Condrieu is a white wine that goes very well with creamy chicken dishes. Salmon is a gutsy enough fish to happily team up with red wine, both in the glass and on the plate. Here it is served with a red wine beurre blanc
