Rose and cardamom are two fragrances that stem from Tunisian and Moroccan cuisine. Pierre Hermd, the famous pâtissier who has had such an influence on French desserts and sweets over the last few years, uses rose in one of his most famous cakes, making rose-flavoured desserts very popular. Here is one of my own - delicate and simple to make, these creams are pretty summer desserts.
