A refreshing dessert with Spanish influences, it takes a little meticulous preparation but then will behave itself in the fridge until you need it. If you can’t find almond ice cream, use hazelnut or vanilla.

Ingredients

  • 10-12 juicy oranges
  • 150 ml white wine
  • 75 g sugar

Method

Peel the oranges and remove their flesh with a sharp knife, slipping in and out of the segments. Do this over a large bowl to collect all the juice.

Heat the wine, dissolve the sugar in it and simmer for about 15 minutes.

Mix the cornflour with a little water and pour into the wine syrup. Add the orange segments and orange and lemon juice. Heat gently for 2-3 minutes, so the ora
