A refreshing dessert with Spanish influences, it takes a little meticulous preparation but then will behave itself in the fridge until you need it. If you can’t find almond ice cream, use hazelnut or vanilla.
Peel the oranges and remove their flesh with a sharp knife, slipping in and out of the segments. Do this over a large bowl to collect all the juice.
Heat the wine, dissolve the sugar in it and simmer for about 15 minutes.
