The tarte Tatin or upside-down tart has seen a real resurgence in France over the past few years. The wonderful thing about it is that you can make it with lots of different fruits. Dried mango goes really well with bananas, creating an interesting texture, as long as you use the plump sliced dried mango (no leathery slices please). Of course, if you can find a delicious ripe mango, one that’s not too juicy, that would do just fine as well.
