Vegetable tarts are served either as an antipasto or as a light main meal. You can substitute any other vegetable for the leeks here. Onions, artichokes, green beans, silverbeet (Swiss chard), spinach and mushrooms are a good choice. Estimate that you will need 2 full cups of the sliced and cooked vegetable. You can add fresh herbs and seasonings of your choice.
