Although this recipe uses six different types of meat, in Italy it is also very common to boil only one type of meat — either beef or chicken — and to serve pasta in the stock as a first course with grated Parmesan cheese. The boiled meat is eaten as a second course accompanied by salsa verde and acciugata. A different variety of meats may be used in a reduced quantity, as well.
