This dessert — something between a pudding and a cake — is also ideal as a snack, or even for breakfast. You can vary the flavouring, or just make it plain. If you don’t use candied fruits, add about 40 g (1½ oz) more sugar to the mixture.
Make it in a round, non-stick cake tin — 28 cm (11 in) in diameter with sides of about 5 cm (2 in).
