This popular dessert is easy to make and, as its name implies, is a quick fix — a ‘pick-me-up’ with a shot of coffee and sugar. Although this recipe calls for Marsala, you can use another liqueur, if you prefer.

This makes about 10 small cup moulds, or 1 large deep dish of about 25 x 35 cm (10 x 14 in).


  • 6 eggs, separated
  • 125 g ( oz) caster (superfine) sugar


Whip the yolks in a bowl with the sugar until they are very thick and creamy. Add the mascarpone and whisk until it is well blended, the mixture is thick and ribbons form with the whisk. Whisk the egg whites to soft peaks and gently fold them into the mascarpone mixture to blend.

Put the cooled coffee into a bowl and mix in the Marsala. Dip the biscuits into the liquid mixture and line
