This may be served hot or cold in wedges, as part of an antipasto or as a light meal. Nettle has healing properties as well as good taste. The leaves are collected in spring and are rich in vitamins and minerals. Nettle should be picked with gloves. Choose the tips of the plant as they are softer. Strip the leaves off the stalk and discard the stalks. The sting is extinguished in its washing water, so handle with gloves before and while washing it. Once cooked, the leaves become really soft
