Tagliolini are slightly larger and flatter than spaghetti, and smaller than tagliatelle. This is a very delicate sauce, well suited to this fresh egg noodle.
Make the pasta dough following the instructions. Cover with a clean cloth and leave it to rest at room temperature for about 30 minutes before rolling it out.
