This can be prepared ahead of time and just heated through to serve — together with some boiled potatoes and vegetables or simply with lots of bread to soak up the sauce.


  • 1 chicken, about 1.5 kg (3 lb 5 oz), cleaned, insides removed, skinned and cut into 8 portions

Rinse the chicken pieces in cold water and pat them dry with paper towels.

Heat half of the olive oil in a large saucepan. Add the chicken pieces and sauté until the chicken is lightly browned on both sides. Season with salt and pepper.
