You can add a vanilla bean or any other spices you like to the syrup.
Put the sugar and water into a saucepan. Bring to the boil and boil for 5 minutes. Lower the heat and add the cherries. Simmer for 10 minutes in the syrup. Remove from the heat and let the cherries cool in the syrup. Serve warm or cold with the mint stirred and accompanied by vanilla ice cream or deep-fried pastry ribbons.
