This is ideal on a warm day, after a heavy meal or as a palate cleanser. It is difficult to make sorbet without an ice-cream machine, as it tends to freeze into a block of ice.

Ingredients

  • 300 g (10½ oz) caster (superfine) sugar

Method

Put the sugar into a saucepan with 250 ml (1 cup) of the water to boil. Boil for a couple of minutes to make a syrup and remove from the heat. Mix in the remaining water and the lemon juice. Cool completel
