Fresh tomatoes are preserved to use in months when they are not readily available. If you have many fresh, perfect tomatoes — you can preserve them for future use.
This quantity can be stored in one large jar, or in many smaller jars. When preserving you will probably be making more tomatoes than indicated in this recipe.
Make sure that each jar gets a garlic clove and a few basil leaves. If you use salt, don’t add extra until you cook the tomatoes. See
