You can cook this under the oven grill or on a barbecue. Make sure that the grill is very hot before putting the chicken into the oven. You can use any other herbs that you like in the marinade.

Ingredients

  • 1 chicken, about 1.5 kg (3 lb 5 oz), insides removed
  • 1 sprig of sage, leaves stripped off stalk
  • 1 spri

Method

Cut the chicken along the backbone. Open out the chicken to flatten it completely. Make slashes with a sharp knife across the thickest parts of the breast and thigh meat to ensure they cook through. Chop up the sage and thyme leaves. Make a marinade with the olive oil, garlic, lemon juice and the chopped herbs. Splash over the chicken. Season with salt and pepper and leave to marinate for about
