This salad could be served as an antipasto or as a healthy side dish to accompany a simple, summery grilled fish or chicken. The mixed fresh salad leaves, in their differing tastes and textures, need only be lightly coated with the olive oil and vinegar dressing. You can substitute the juice of about half a lemon for the balsamic vinegar.
