Whole trout, which will require slightly longer cooking time, looks good for serving, although fillets will be easier to serve. This dish is good served at any temperature.

Ingredients

  • 2 medium-sized, red capsicums (peppers)
  • 2 medium sized, yellow capsicums (peppers)
  • 2 medium sized,

Method

Preheat the oven to 190°C (375°F/Gas 5). Halve the peppers vertically. Remove the seeds and fibres and discard and slice the peppers into fine strips.

Heat 5 tablespoons of the olive oil in a large saucepan and add the peppers, the carrots and the onion.
