This gorgeous fruit makes any difficulty in handling it worthwhile. It is hard not to be charmed by quinces, once you have witnessed the magical colour transformation that occurs during the cooking process.

This jam includes a couple of pears to maintain a jam consistency, but not to render the flavour unrecognisable.

You can, however, use only quinces, substituting the pears with extra quinces, and make a firmer quince preserve.
