Cut up the butter into pieces and put into a wide bowl. Add the flour and 1 flat teaspoon of salt and mix in, sifting and working it through your fingers until it looks like large crumbs.
Add the oil and water, and knead it gently and quickly with your hands just until the dough comes together in a mass. (Do not work it a lot as you would a bread dough.)
