You can leave out the lemon zest if it doesn’t complement the flavour of the filling, or substitute it with orange zest, or a little powdered cinnamon, etc. This pastry is different from bread or pasta and should not be kneaded, but gently, yet thoroughly worked to incorporate the ingredients. The tart should be 2.5 cm (1 in) high and have enough pastry for a lattice crust or topping.
