Couscous Salad

Couscous seems to be appearing everywhere these days, so voilà.

Ingredients

  • 150g/6oz couscous
  • 1 red pepper, skinned, deseeded and chopped
  • 1 yellow pepper, skinned, deseeded and chopped
  • 4 spring onions, finely chopped
  • 3 tomatoes, skinned, deseeded and chopped
  • 1 tbsp chopped parsley
  • 1 tbsp chopped olives

For The Dressing

  • 4 tbsp virgin olive oil
  • grated zest and juice of ½ a lemon
  • 1 clove of garlic, crushed
  • salt and freshly ground pepper

Method

Cook the couscous according to the packet instructions. When the grains have swollen, fold in the salad ingredients. Put the dressing ingredients in a lidded jar and shake vigorously. Pour over the couscous and mix well before turning into a serving dish.
