Spinach and Rice

A great comfort, and so good for you too.


  • 2 tbsp virgin olive oil
  • 4 shallots, finely chopped
  • 1 large clove of garlic
  • 150g/6oz long grain rice, cooked
  • 150g/6oz spinach, cooked, drained and liquidised
  • 1 tbsp mint, finely chopped
  • ½ tsp cinnamon
  • salt and freshly ground pepper


Heat the olive oil in a frying pan, add the shallots and garlic and cook for a few minutes to soften, don’t brown or burn. Add rice to frying pan, stir and coat with the oil. Add spinach, mint, cinnamon, salt and pepper and stir. Cook until the contents of the pan are heated through.
