Studded with sultanas and a delicious lemony sharpness that cuts through the richness, this deeply decadent cheesecake is one of those dishes that takes me straight back to my childhood. I prefer to make mine in a deep 20cm (8in) Springform tin with a height of just under 9cm (¾in). If you only have a shallow 22cm-23cm (9in) Springform tin, use the smaller quantities given for the filling ingredients.
