  • 5 kg mineral water
  • 800 g glucose syrup
  • 100 sheets<

Method

Combine the water and the glucose in a pot wide enough for the sheets of shiroita kombu to lie out flat, but not too wide for them to have room to float around during cooking (a 13 in./32 cm pot is ideal).
