Method

Yellow Tail Fillets

Panné the yellow tail with a generous amount of the cure. Place the fillet on a rack inside of a container, cover tightly and allow to stand in the fridge to cure for 15 minutes to 1 hour depending on size. Rinse under running cold water until all of the cure mix is removed and dry on all sides using paper towels. Slice and reserve in the fridge until needed.
