To make the finely ground salt kombu, place salt kombu in a container with liquid nitrogen. Strain the nitro off and transfer the mixture to a Thermomix. Blend on high speed for 17 minutes. Place the mixture on a dehydrator tray and allow to dry overnight. Repeat this process with the glazed sesame seeds.
