For the Crab and Balsamic Reduction

  • 1 kg balsamic vinegar
  • 500 g reserved crab reduction

Method

Place the balsamic vinegar into the bowl of a Rocket evaporator and reduce by half. Remove the vinegar from the Rocket and mix in an equal amount of the reserved crab reduction. Store in a small squeeze sauce bottle.
