  • 3 pieces Horikawa burdock root, each oz. (20 g)
  • Cloudy, white water

Method

Blanch the burdock root pieces in rice-washing water until tender. Rinse in cold water and blanch again in fresh boiling water. Drain well, combine with the dashi, usukuchi soy sauce, and mirin and simmer over low heat for several minutes.
