Another basic dish that can stand plenty of adjustment and substitution. If you can’t find Smithfield ham or prosciutto, use 1 tablespoon oil and 1 tablespoon bacon fat; if you want to double the recipe, fine.

Ingredients

  • 1 pound bok choy, cleaned (see Preparation)

Method

  1. Slice bok choy stems from leaves. Cut widest part of stalks in half lengthwise; then cut stalks across on a slant to make ½-inch wide slices. Halve leaves lengthwise, then slice across ½ inch wide. Quarter and core the apple (do not peel). Cut each quarter crosswise into ⅛-inch slices.
