  • About

A lovely example of cross-cultural cuisine: traditional European oven-braising, plus crispy Oriental cabbage, plus French cheese and mustard yield a mellow, useful hybrid side dish. Barbara (best friend and cookbook editor) reminds me that there is no reason to be strict about the 400-degree temperature. Between 350 and 425 degrees will do fine, to agree with whatever else you may be baking or roasting.
