Method

Buttercup is transformed by steaming. Its dense texture becomes custard-smooth. Because the cavity is wastefully large and seeds usually plentiful and heavy, you’ll need to figure about ¾ pound per person, cooked this way. Halve and seed, then place cut side down on a steamer rack. Cover and steam 15-20 minutes, until tender wh
