Method

This quickly assembled unseasoned purée is intended for use as an ingredient in other dishes—desserts, soups, sauces. Refrigerate up to a week, or freeze indefinitely. You can figure the cup yield to be the same as the number of pounds: that is, 1 pound untrimmed squash produces about 1 cup purée.
