Spaghetti with Cilantro, Corn, and Tomatoes

Fragrant cilantro, sweet corn, and summer tomatoes have so much color and flavor that you may be surprised to find this a low-calorie meal.

Ingredients

  • 2 very ripe medium tomatoes, stem ends removed
  • 1 medium ear fresh corn, husked
  • ½ pound

Method

  1. Drop tomatoes and corn into a large pot of boiling, salted water; return to a boil on highest heat. Boil 15 seconds. Remove tomatoes; let corn boil 1 minute, then remove. Cover pot and lower heat.
  2. Peel tomatoes, halve, and squeeze out seeds. Cut one tomato into ½-inch dice. Cut kernels from cob.
