Delicata Squash Halves Baked with Cream and Basil

No time or trouble is required to prepare this. The very small amount of cream flavors, moistens, and lightly glazes the smooth squash while adding very few calories. Set the halves in the oven to bake during the last 45 minutes of roasting time when you prepare turkey, ham, or chicken.

Ingredients

  • 1 delicata squash, about 1 pound, rinsed
  • Salt and sugar to taste

Method

  1. Cut or knock off squash stem. Hold squash upright on this relatively flat end and very carefully slice down with a heavy knife to make 2 long halves. With melon-ball cutter scoop out all seeds and fibers. Shave a thin sliver from each curved underside so halves do not tip.
