Steamed Delicata Rings with Walnut Dressing

This squash looks delightful cut in rings, the scalloped form of each decorated with bits of striped skin. You can also serve the steamed squash hot with lemon butter or Nutmeg Cream for an equally delicious side dish.

Ingredients

  • 1 delicata squash, about 1 pound
  • 1 tablespoon lemon juice
  • ½ teaspoon

Method

  1. With vegetable peeler remove skin from squash, leaving what remains naturally in the indentations. Cut out stem end. With melon-ball cutter scoop out all seeds and fibers. Slice squash crosswise into rounds about ¾ inch thick.
