Fresh and clean, this pale, crunchy salad goes well with rather light foods that are simply seasoned.

Ingredients

  • 2 packages of enokidake (each 3.5 ounces, approximately)
  • 3 large Kirby cucumbers, or another kind that is not

Method

  1. Rinse enokidake, then pat dry. Trim off 1-2 inches of the heavy base; halve stems crosswise.
  2. Scrub cucumbers well; do not peel. Seed if necessary; slice into fine julienne slivers about the size of the mushrooms. Toss both in a serving dish.
  3. Stir together lemon juice, sugar, and salt in a bowl. Blend in sour cream. Drizzle over the vegetables, then sp
