Fresh morels are better served with a hot bath in thin cream than a searing experience in a buttery pan. The gentle cooking seems to enhance the flavors, while a sauté diminishes the subtleties.

  1. Combine cream, shallots, and teaspoon salt in a small saucepan and simmer, covered, until shallots are soft—about 5 minutes.
