While the combination of okra and tomatoes may be familiar, it is such a delicious pairing that it warrants frequent repetition. Here, a smoky underpinning of slab bacon adds its distinctive savor to the speedily cooked sliced okra, diced onion, and sweet strips of plum tomato. I cook the okra just until it loses its crunch, but some may prefer a meltingly soft vegetable. Both are delicious: it’s simply a matter of taste.
