Method

For an accompaniment that suits just about any dish that a fried potato might, sauté slightly sweet half-ripe plantain slices until golden brown. Rather dry, somewhat firm, they will taste like a cross between potatoes and bananas: easy, appealing, just a little out of the ordinary.
