In this dessert, plantains both absorb and thicken their rich sauce, creating a deliciously sticky, brown-butter gloss. Called plátanos en tentación in some Latin cuisines—which translates roughly as plantain temptation—the sweet is one that can be assembled on a whim (provided you have the plantains).

Ingredients

  • 2 good-sized black-ripe plantains
  • 2 tablespoons softened butter
  • 1 cinnamon stick,

Method

  1. Slit plantain peel lengthwise; pull off. Halve fruit crosswise, then lengthwise. Spread half the butter in baking dish that will hold pieces closely. Arrange plantains, slightly overlapping. Scatter over cinnamon and cloves; spoon over lemon juice; top with butter, cut in small bits.
