In this simple and special dish, quinces show off their unusual ability to remain neatly intact, even as they become yielding with prolonged cooking. Subtly spicy and fruity, this combination produces a unique fall pleasure.

Ingredients

  • 4 medium quinces, about 2 pounds
  • 1 cup apple juice

Method

  1. Quarter, peel, and core quinces. Combine in a nonaluminum pan with apple juice and wine; simmer, covered, until tender. (Timing varies, but 30–50 minutes is usual.) Add sugar to taste; simmer, uncovered, until pan liquid reduces to 1 cup—about 5–10 minutes.
