This sweet, a time-honored favorite in France, where it is called cotignac, is also familiar as membrillo in Spain. It makes a charming old-fashioned gift.

Because it takes a long time to reduce to the proper consistency, I’d suggest a few helping hands for stirring—but not little ones, as the hot paste splutters dangerously.
