When served whole, black radishes do best with some of the thickish skin pared off. Using a zester (the small tool designed to remove strips of peel from citrus fruit), you can zip stripes of skin from each radish, leaving a sharply delineated black-and-white decoration. And the black neither grays out nor peels off when the radish is boiled.
