Pungent radish mingles with sweet pork in a meal-in-broth reminiscent of Japanese nabe mono (one-pot meals). The soup is unusually flavorful for a soup that has no mellowing time, thanks to the aggressive black radish—which is quickly tamed by cooking in broth.

Small packets of cellophane noodles (also called saifun, silver noodles, or bean threads) can usually be found in Oriental groceries or in the Oriental section of the supermarket.
