Another absurdly simple treatment that works perfectly for this flavor-rich, tender-fleshed squash. Figure on one small sweet dumpling per person. The cornlike aroma can be enhanced by using mace and nutmeg, as you would in a corn pudding. Or you might try a provençal approach with garlic, fennel, and thyme.

Rinse squash and cut a neat cap, working carefully; the squash is quite hard. With melon-ball cutter scrape out all seeds and fibers. Sprinkle squash generously with salt and white pepper.
