Apparently what was good for Virginia (see quotes in general introduction to turnip greens) was fine for Kentucky, too. In The Kentucky Housewife (1839) Mrs. Lettice Bryan gives this explicit and delicious recipe for Turnip Sallad. Although I have not picked my own tops, I have happily cooked store-bought greens this way:
