Chewy wood ears, soft scrambled eggs, firm rice grains, and crunchy vegetables create an appealing textural play. Add slivers of cooked meat just before you stir-fry the rice, for variation. If you have about 372 cups cooked, cold rice, it works even better than freshly prepared. Jim recommends toting along the colorful dish to a picnic, as it is delicious at room temperature.
