Tart-sweet, briskly gingery and garlicky, this quick side dish will make a meal with any plain-broiled meat, poultry, or fish.

Ingredients

  • 3 tablespoons peanut oil
  • pounds yard-long beans (preferably the lighter-green variety), trimmed and cut in 1-inch diagonal lengths

Method

  1. In large skillet or wok heat oil. Add beans and toss over moderate heat until almost tender—about 5–6 minutes; beans will be slightly wrinkled and lightly browned. Add garlic; toss for a minute.
  2. Combine ginger, soy sauce, lime juice, and sugar in a cup; stir to mix. Add to beans and toss over high heat until liquid evaporates. Season and serve hot, sprinkled wi
