Peru, the country that gave the world the potato (thank you!), also gave us the flavor combination of olive, cilantro, peanut, and lime. Shaking your head? I did too when I tried to imagine how they would taste together. The salty sweetness of the olives combined with peanut, zesty cilantro, and tangy lime is extraordinary. Fresh lima beans really make this dish, but if they are not available you can prepare this recipe with thawed frozen beans.
